Week 8: Rachael’s tricks for keeping her diet fresh
Hi skinny-sters! I’m feeling pretty good about myself. I’m back on track with my diet again, and I keep losing weight, slowly but steadily. But now I’m facing a new problem: food boredom! I was starting to get tired with the same meals for lunch and snack every day, so I'm trying to shake things up. One of the best things I’ve found so far? Online ordering sites where I can pre-order my lunches. A lot of places around the city let you order and pay for your delivery in the morning or even the night before. This is really effective for me; if I’m having a crazy day at work, I can’t always handle the stress of picking out a healthy lunch at the local deli. Seriously. There are cookies there, and if I’m feeling crummy I might just order one. Ordering in the morning when my willpower is strong is a good thing for me. It’s awesome to know that at 12:30 everyday I’m going to have a healthy lunch delivered. One place I’m loving right now is Fresh & Co. — they even have an F-Factor salad, so I know I’m on track! Plus, it's super delicious.
I’m also happy to report the construction on my kitchen was officially finished last Friday, so I celebrated by making a big pot of veggie soup. (It was perfect for the cold weather we’ve been having!) I packed the soup up into five individual Tupperware bowls and I bring one for my late afternoon snack each day during the week (I don’t eat dinner until late). It was awesome having something warm to look forward to when my tummy started to growl at 4 p.m. I’m working pretty hard to keep this diet feeling new and exciting; I’ve found that’s key to making it stick. And it’s really starting to pay off! I’m noticing that my clothes are fitting differently. I’m getting a lot of compliments from friends who all want to know what I’m doing. It’s fun to get noticed and it’s good positive reinforcement to keep on going. I think it might be time to do a little shopping!

Keep up the good work! You're doing awesome! When I set out on my journey to lose 100+ pounds (i've done it, and kept it off!) I found the secret was to find healthier alternatives and recipe switches for the foods I love and could not give up. I'd pick a few recipes cook them up over the weekend and freeze half and put half in the fridge, so when I'd be in between class and work I could easily pick up a tupperware and go. I always say never do anything you can't maintain for life, so eat the foods you love but realize that there's always a delicious healthier alternative or recipe swap to help you reach your goals while eating what you love!
Another thing I do is make up a huge pot of "ratatouille soup" in the beginning of the week. I saute some onion and garlic in low sodium veg soup broth then add eggplant, zucchini, tomato, fire roasted canned tomatoes, more onions pepper and spinach, any other fresh veg I have and tons of spices and add another cup or two of broth and then I bring it to a boil, lower and let it simmer covered for 45 minutes or until everything is tender. Then I have a huge pot of yummy vegetables for the week. Sometimes I'll throw some into pasta, other times I'll put them into an omelette. So easy tasty and versatile!

My husband and I have both lost weight by increasing the fiber and lowering the sugar in our diet. We got a panini maker and use a flat bread made by Flatout, most of the ones they make are 9 grams of fiber each. I have increased the amount of vegetables in most of the meals I eat. Every morning we both eat instant oatmeal, the type that has less sugar and more fiber than other brands. We eat sugar free jello pudding with sugar free whip cream for alot of our deserts. We still eat sweets but not as often. I keep checking labels for the fiber content 3 grams or more is what I try to buy. These changes with more walking and other exercise seem to be working. I have lost 15 pounds since August '09 and seem to be maintaining. This website has helped with some great ideas and recipes:)
